15 Minute Chilli Tofu Noodles

Description

Quick and flavorful chilli tofu noodles that are perfect for busy weeknights and impromptu gatherings.


Ingredients

  • 200g of noodles
  • 250g of firm tofu
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of chili paste
  • 2 cloves of garlic, minced
  • 1 bell pepper, sliced thinly
  • 2 spring onions, chopped
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Press the tofu to eliminate moisture by wrapping it in a clean towel and placing a weight on top for around 10 minutes.
  2. While the tofu presses, boil water in a large pot. Add noodles and cook according to package instructions, around 3-5 minutes.
  3. Drain noodles and set aside.
  4. In a skillet, heat vegetable oil over medium heat, cut the pressed tofu into cubes, and cook until golden brown on all sides, approximately 5-7 minutes.
  5. Add minced garlic and sliced bell pepper to the skillet and sauté for 2-3 minutes until the veggies soften.
  6. Mix soy sauce and chili paste in a small bowl, then pour over the tofu and vegetable mixture. Stir to coat everything evenly.
  7. Toss the cooked noodles into the skillet. Mix well until everything is combined and heated through.
  8. Season with salt and pepper to taste. Serve topped with chopped spring onions and fresh cilantro.

Notes

For added flavor, consider marinating the tofu beforehand or swapping in different vegetables like broccoli or carrots.
