Description

A quick and flavorful fried rice dish featuring Spam, fresh vegetables, and eggs, perfect for a comforting weeknight dinner.


Ingredients

  • 2 cups cooked rice
  • 1 can Spam, diced
  • 2 eggs, beaten
  • 1 cup green peas
  • 1 cup carrots, diced
  • 1 cup corn
  • 3 tablespoons soy sauce
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. In a large skillet or wok, melt the butter over medium heat.
  2. Add the diced Spam and cook until browned, about 5 minutes.
  3. Push the Spam to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
  4. Add the cooked rice, green peas, carrots, and corn to the skillet.
  5. Drizzle with soy sauce and stir everything together.
  6. Season with salt and pepper to taste.
  7. Cook for an additional 3-5 minutes until everything is heated through.
  8. Serve hot, garnished with green onions if desired.

Notes

Using day-old rice works best to prevent clumping. Feel free to experiment with additional vegetables or proteins.
