- 2 cups cooked rice
- 1 can Spam, diced
- 2 eggs, beaten
- 1 cup green peas
- 1 cup carrots, diced
- 1 cup corn
- 3 tablespoons soy sauce
- 2 tablespoons butter
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- In a large skillet or wok, melt the butter over medium heat.
- Add the diced Spam and cook until browned, about 5 minutes.
- Push the Spam to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
- Add the cooked rice, green peas, carrots, and corn to the skillet.
- Drizzle with soy sauce and stir everything together.
- Season with salt and pepper to taste.
- Cook for an additional 3-5 minutes until everything is heated through.
- Serve hot, garnished with green onions if desired.
Notes
Using day-old rice works best to prevent clumping. Feel free to experiment with additional vegetables or proteins.
