Ingredients

  • 30ml chopped cilantro
  • juice of 1/2 lime
  • 1/2 teaspoon (3 ml) red pepper flakes (optional)
  • salt & pepper to taste
  • 2 slices whole grain bread (or bread of choice)
  • 2 eggs (fried, scrambled, or poached, optional)

Instructions

  1. Place two pieces of whole grain bread into a toaster and heat until they are golden brown and crunchy.
  2. In a small mixing bowl, combine and mash together the avocado, cilantro, lime juice, and season with salt and pepper as needed.
  3. Evenly distribute half of the mashed mixture onto each of the toasted bread slices.
  4. If preferred, add a fried, scrambled, or poached egg on top.

Notes

  • For a spicier kick, sprinkle red pepper flakes on top of the avocado mixture before adding the egg.
