- 30ml chopped cilantro
- juice of 1/2 lime
- 1/2 teaspoon (3 ml) red pepper flakes (optional)
- salt & pepper to taste
- 2 slices whole grain bread (or bread of choice)
- 2 eggs (fried, scrambled, or poached, optional)
Instructions
- Place two pieces of whole grain bread into a toaster and heat until they are golden brown and crunchy.
- In a small mixing bowl, combine and mash together the avocado, cilantro, lime juice, and season with salt and pepper as needed.
- Evenly distribute half of the mashed mixture onto each of the toasted bread slices.
- If preferred, add a fried, scrambled, or poached egg on top.
Notes
- For a spicier kick, sprinkle red pepper flakes on top of the avocado mixture before adding the egg.
