Description
Transform your leftover mashed potatoes into crispy and cheesy bites with this air fryer recipe. Perfect as a snack or side dish!
Ingredients
Scale
- 2 cups mashed potatoes (chilled and firm)
- 1 cup shredded mozzarella or cheddar cheese
- ½ cup grated Parmesan cheese
- 1 egg, beaten
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper, to taste
- 1 cup breadcrumbs (panko or regular)
- Cooking spray or a little olive oil
Instructions
- Prepare the mashed potatoes. Ensure the mashed potatoes are chilled and firm. If using freshly made potatoes, allow them to cool completely before mixing.
- Mix the ingredients together. In a large bowl, combine the mashed potatoes, mozzarella (or cheddar) cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper. Stir until well combined.
- Shape the balls. Take small portions of the mashed potato mixture and roll them into 1 to 1.5-inch balls. Dampening your hands slightly can help if the mixture is sticky.
- Coat the balls. Roll each ball in breadcrumbs, ensuring they are fully coated. Panko breadcrumbs will provide extra crunch.
- Air fry the balls. Preheat the air fryer to 375°F (190°C), lightly spraying the basket with cooking spray or brushing it with olive oil. Lay the potato balls in the air fryer in a single layer.
- Cook. Air fry for 10-12 minutes, flipping halfway through, until the potato balls are golden and crispy on the outside.
Notes
For variety, experiment with different cheeses or seasonings. Serve with your favorite dipping sauces.
