Description

Delicious air fryer shrimp tacos filled with juicy shrimp, vibrant mango corn salsa, and creamy avocado crema.


Ingredients

  • 1.5 lbs. raw jumbo shrimp, tails off and deveined
  • 1 tsp. smoked paprika
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 6 snack-size flour tortillas (Carb Counter)
  • Shredded cabbage
  • 150g canned corn (about 1/2 a container)
  • 1 small mango (chopped, roughly 140g)
  • 2 small vine tomatoes (chopped, about 200g)
  • 1/2 red onion (finely sliced, about 100g)
  • 1 cup fresh cilantro
  • Juice of 1 lime
  • 1/2 Tbsp. salt
  • 2 avocados (about 183g)
  • 1/2 cup low-fat cottage cheese (about 110g)
  • 4 Tbsp. lime juice
  • 1/4 cup cilantro
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 23 Tbsp. milk (any kind, to thin out)

Instructions

  1. Prepare the shrimp by tossing them with smoked paprika, ground cumin, chili powder, and salt in a bowl until evenly coated.
  2. Preheat the air fryer to 400°F (200°C).
  3. Place the seasoned shrimp in the air fryer basket in a single layer. Cook for 6-8 minutes, shaking halfway through until shrimp are pink and cooked through.
  4. Meanwhile, mix together mango, corn, tomatoes, red onion, cilantro, and lime juice in a bowl. Season with salt to taste to create the mango corn salsa.
  5. For the crema, blend the avocados, cottage cheese, lime juice, fresh cilantro, salt, garlic powder, and milk until smooth. Adjust the consistency with more milk if desired.
  6. Warm the tortillas in the oven or on a skillet for a few seconds.
  7. Fill each tortilla with shrimp, add shredded cabbage, top with mango corn salsa, and drizzle avocado crema on top.
  8. Serve immediately for a delightful meal that bursts with flavor.

Notes

Consider marinating the shrimp for extra flavor. Serve with lime wedges to enhance taste.
