- 2 medium zucchini
- 1 egg, beaten
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
- Cooking spray
Instructions
- Slice zucchini into 1/4-inch thick rounds.
- Salt the zucchini slices and let them sit for 15 minutes to draw out excess moisture, then pat dry with paper towels.
- In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Dip each zucchini slice in beaten egg, then coat thoroughly in the breadcrumb mixture, pressing the coating onto each piece.
- Preheat air fryer to 400°F.
- Arrange zucchini in a single layer in the air fryer basket, spray lightly with cooking spray.
- Air fry for 8-10 minutes, flipping halfway through, until the exterior is golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
- For extra crispy zucchini, make sure to thoroughly pat dry the zucchini after salting.
- Work in batches if necessary to avoid overcrowding the air fryer.
