  • 1 tub (8 oz) Cool Whip – thawed
  • 2 cups mini marshmallows – white or pastel
  • 1 cup shredded coconut – sweetened
  • ½ cup chopped pecans – optional
  • 1 cup fresh strawberries – sliced, optional
  • 1 banana – sliced just before serving, optional

Instructions

  1. Begin by draining and preparing your fruits.
  2. Make the creamy base by combining the sour cream, Cool Whip, mini marshmallows, and shredded coconut in a large mixing bowl.
  3. Toss your prepared fruits with the reserved pineapple juice to enhance their flavors.
  4. Fold the fruits gently into the creamy mixture.
  5. Chill in the refrigerator for at least an hour before serving.
  6. Garnish with additional fruits or nuts for presentation, if desired.

Notes

Chilling the salad overnight can enhance the flavors even more. For a sweeter salad, add more marshmallows or coconut.
