  • 2 cups (300 g) grated zucchini
  • 3 cups (360 g) all-purpose flour
  • 1 tsp (5 ml) baking soda
  • 1/4 tsp (1.25 ml) baking powder

Instructions

  1. Set your oven to warm up to 325°F.
  2. Assemble all the necessary components.
  3. Shred enough zucchini to fill two cups, ensuring it’s fluffy and slightly heaping in the measurement; there’s no need to squeeze out the moisture.
  4. In a large bowl, whisk the three eggs with an electric mixer on a high setting until they turn frothy, which will help make your bread airy.
  5. Then, incorporate the zucchini along with all the other ingredients into the bowl. Mix them together using the electric mixer on a medium speed just until they come together; be careful not to mix too much, as this could result in a sticky dough.
  6. Prepare two loaf pans by lightly oiling and dusting them with flour. Afterward, pour the dough evenly into each prepared pan.
  7. Place on the middle shelf of the oven and bake for one hour at 325°F. Check halfway to make sure the tops don’t brown too much.
  8. Once a skewer inserted in the center comes out without any batter, take the loaves out and let them rest on a wire rack for 10 minutes. Afterward, remove the bread from the pans and continue to cool on the rack until it is barely warm to the touch.
