- 2 cups (300 g) grated zucchini
- 3 cups (360 g) all-purpose flour
- 1 tsp (5 ml) baking soda
- 1/4 tsp (1.25 ml) baking powder
Instructions
- Set your oven to warm up to 325°F.
- Assemble all the necessary components.
- Shred enough zucchini to fill two cups, ensuring it’s fluffy and slightly heaping in the measurement; there’s no need to squeeze out the moisture.
- In a large bowl, whisk the three eggs with an electric mixer on a high setting until they turn frothy, which will help make your bread airy.
- Then, incorporate the zucchini along with all the other ingredients into the bowl. Mix them together using the electric mixer on a medium speed just until they come together; be careful not to mix too much, as this could result in a sticky dough.
- Prepare two loaf pans by lightly oiling and dusting them with flour. Afterward, pour the dough evenly into each prepared pan.
- Place on the middle shelf of the oven and bake for one hour at 325°F. Check halfway to make sure the tops don’t brown too much.
- Once a skewer inserted in the center comes out without any batter, take the loaves out and let them rest on a wire rack for 10 minutes. Afterward, remove the bread from the pans and continue to cool on the rack until it is barely warm to the touch.
