  • 21/2 cups (300 g) all-purpose flour
  • 1 tablespoon (15 ml) ground cinnamon
  • 1 teaspoon (5 ml) baking powder
  • 1/2 teaspoon (3 ml) salt
  • Dash ground nutmeg
  • Sugar, for coating
  • 1/2 cup (120 ml) apple butter

Instructions

  1. In a stand mixer with a paddle attachment, combine the softened beef tallow, powdered sugar, and packed brown sugar at a medium-high setting. Occasionally scrape the sides, mixing for 2-3 minutes until smooth. Add the egg and vanilla, mixing until incorporated.
  2. In another bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, salt, and a touch of nutmeg. Gradually fold this dry blend into the tallow-sugar mixture in two parts, scraping the sides as necessary. Cover the mix and refrigerate for half an hour.
  3. Set the oven to 325°F and prepare a 15x10x1-inch baking tray with parchment paper. Pour some sugar into a separate small bowl. Shape the dough into 24 balls, each about a rounded tablespoon. Slightly flatten them and roll each in the sugar to coat. Space them 2 inches apart on the baking tray.
  4. Use the back of a teaspoon to create a hollow in the middle of each dough ball. Pinch the edges with your thumb and forefinger to deepen and enlarge the center. Fill each cavity with a teaspoon of apple butter. Keep any unused dough chilled until baking.
  5. Bake the cookies for 13-14 minutes, or until the edges are firm. Move them to a wire rack to cool down fully.
