Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken thighs with salt and black pepper.
- Sear chicken thighs in the skillet until browned on both sides, about 4-5 minutes per side.
- Remove chicken from the skillet and set aside.
- In the same skillet, add sliced onion and sauté until translucent, about 3 minutes.
- Add minced garlic and cook for an additional 1 minute.
- Pour in chicken broth and apple juice, stirring to combine.
- Stir in apple cider vinegar, ground cinnamon, and honey.
- Return chicken thighs to the skillet.
- Add sliced apples and fresh thyme sprigs to the skillet.
- Bring the mixture to a gentle simmer.
- Cover the skillet and reduce heat to low.
- Braise chicken for 25-30 minutes, or until fully cooked and tender.
- Remove thyme sprigs before serving.
- Serve chicken with braised apples and sauce.
