  • – 1 teaspoon (5 ml) cinnamon

  • – 1/3 cup (79 g) coconut cream, warmed slightly
  • – 1/2 teaspoon (3 ml) vanilla extract
  • – 1 pinch sea salt

Instructions

  1. Pour the apple cider and sprinkle in the cinnamon into a small pot set over medium-high flame. Let it simmer for 18-20 minutes until it reduces to roughly ¼ cup, then set it aside.
  2. In a different medium-sized pot with a sturdy bottom, evenly distribute the granulated sugar. Place this pot on medium-low heat without stirring initially. Allow the sugar to start melting on its own.
  3. When the sugar begins to liquefy at the edges, carefully tilt the pot to help it dissolve uniformly. Once a considerable portion is melted, gently stir with a wooden spoon or a heatproof silicone spatula to ensure even melting. (This process might feel slow initially, but the sugar will eventually liquefy fully and take on a golden hue.)
  4. Keep heating the sugar, stirring gently, until it develops a deep amber shade, which should take about 5-10 minutes. Be vigilant to avoid burning it.
  5. When the sugar turns a deep amber, lower the heat. Slowly incorporate the butter while continuously stirring until it melts completely.
  6. Gradually add the warmed coconut cream, stirring as you go. Be careful as it will bubble vigorously.
  7. Mix in the reduced apple cider and vanilla extract until the mixture is uniform. Sprinkle in a touch of sea salt and stir well.
  8. Continue cooking on a low flame until the sauce is smooth, which should take around 5-10 minutes.
  9. Take it off the heat and let it cool, thickening over time. It can be served either warm or chilled.
