  • Nonstick cooking spray
  • 2 cups (260g) all-purpose flour
  • 1 1/2 teaspoons (8 ml) baking powder
  • 1 teaspoon (5 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) ground nutmeg
  • 1/2 teaspoon (3 ml) salt
  • 1/3 cup (80ml) vegetable oil
  • 4 tablespoons (60 ml) (1/4 cup (60 ml)) unsalted butter, melted and cooled
  • 1 cup (200g) light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract
  • 3 tablespoons (45 ml) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon (5 ml) ground cinnamon

Instructions

  1. Pour the apple cider into a small saucepan and heat over medium flame. Allow it to simmer until it reduces by half, which should take about 8 to 12 minutes. If you end up with less than 1/2 cup, add enough plain cider to reach 1/2 cup. Transfer this to a small bowl and let it cool to room temperature, approximately 20 minutes.
  2. While the cider cools, position an oven rack in the center and lightly coat a 12-cup muffin tray with nonstick spray.
  3. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. In a separate large bowl, blend the oil, melted butter, and packed brown sugar until well mixed, around 1 minute. Gradually add the eggs, one by one, whisking thoroughly after each. Stir in the vanilla extract until the mixture becomes smooth and creamy.
  4. Incorporate half of the dry mixture into the wet ingredients and whisk until just combined. Mix in the reduced apple cider, then add the remaining dry ingredients and stir gently until combined, being careful not to over-mix.
  5. Spoon the batter into each section of the prepared muffin tray, filling each about 2/3 full. This should yield around 11 muffins, depending on your pan. Bake them until they are risen and a toothpick inserted in the center comes out clean, approximately 17 to 23 minutes. Allow the muffins to cool for 5 minutes; then, use a knife to loosen the edges and carefully remove them to a cooling rack placed over a baking sheet.
  6. Combine the granulated sugar and cinnamon in a shallow dish and whisk them together. Brush a few muffins on all sides with the melted butter, then roll each in the cinnamon sugar until fully coated. Repeat for the rest of the muffins. These treats taste best warm but can also be enjoyed at room temperature. Store any remaining muffins in a sealed container for up to three days.
