  • 1/4 cup (50g) granulated sugar
  • 2 1/4 tsp (11 ml) active dry yeast
  • 2 large eggs room temperature
  • 1 tsp (5 ml) vanilla bean paste
  • 1 tsp (5 ml) fine sea salt
  • 4 1/2 cups (565g) all-purpose flour
  • 7 tbsp (100g) unsalted butter diced and softened
  • 3/4 cup (185g) apple juice (reduced to 3 tbsp)
  • 3/4 cup (180g) powdered sugar
  • 2 tbsp (30g) heavy cream
  • vegetable oil for frying
  • ground cinnamon for sprinkling

Instructions

  1. In a large bowl or the bowl of a stand mixer, combine the milk, yeast, and 2 tablespoons of sugar, then mix. Add in the remaining sugar, eggs, flour, salt, and vanilla, mixing until just combined.
  2. Attach the dough hook and mix on medium for around 5 minutes until a soft dough forms. Gradually incorporate the butter, a few pieces at a time, while the mixer is on low. Continue kneading for 10-15 minutes until the dough is smooth, elastic, and detaches from the bowl’s sides. *If you lack a stand mixer, knead the dough manually at this stage.*
  3. Transfer the dough into a large, lightly oiled bowl, cover it with plastic wrap, and let it rise until it doubles, approximately 60-90 minutes. Alternatively, refrigerate overnight for easier handling.
  4. To shape the donuts, place the dough on a floured surface and roll it to about 1/2 inch thickness. Use a round cutter to create circles, placing them on a parchment-lined baking sheet with space between each. Using a smaller cutter, make holes in the center of each circle, placing the cut-out centers on the sheet as well. Cover with plastic wrap.
  5. Allow the donuts to proof for 20 minutes, checking if they hold an indentation when lightly pressed. This may take longer if the dough is cold.
  6. Meanwhile, heat vegetable oil to 350°F (180°C) in a deep fryer or heavy pot. Prepare a baking sheet with paper towels to drain the fried donuts.
  7. Carefully lower a few donuts at a time into the hot oil. Fry until golden underneath, about 2-3 minutes, then flip and cook the opposite side for another 2-3 minutes. Use a slotted spoon to transfer them to the paper towel-lined sheet, then move to a cooling rack.
  8. Simmer the apple juice in a small saucepan over medium heat, stirring occasionally, until reduced to about 3 tablespoons. Check progress at intervals like 5, 10, and 15 minutes. Cool for 10 minutes.
  9. Whisk together the powdered sugar, reduced apple juice, and heavy cream in a medium bowl until smooth. Adjust thickness with powdered sugar or cream as needed. Dip each cooled donut in the glaze, set on a rack with the glaze facing up, and sprinkle ground cinnamon immediately.
