Ingredients

  • 1 1/2 cups almond milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 medium apples, peeled and diced
  • 1/4 cup chopped walnuts (optional)
  • 1 tablespoon coconut oil (for greasing the baking dish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×9 inch baking dish with coconut oil.
  2. Combine the rolled oats, almond milk, maple syrup, vanilla extract, ground cinnamon, baking powder, and salt in a large bowl.
  3. Fold in the diced apples and chopped walnuts (if using) until fully incorporated.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
  5. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and set in the middle.
  6. Allow the oatmeal to cool slightly before serving. Enjoy!
