Scale
  • 1 cup graham cracker crumbs (120g)
  • 1/4 cup unsalted butter, melted (57g)
  • 16 oz cream cheese, softened (454g)
  • 1/2 cup granulated sugar (100g)
  • 1 teaspoon vanilla extract (5ml)
  • 2 large eggs
  • 1/2 teaspoon ground cinnamon (1g)
  • 2 cups (480 ml) peeled and diced apples (about 2 large apples)
  • 1/4 cup granulated sugar (50g)
  • 1 teaspoon ground cinnamon (2g)
  • 1/4 cup all-purpose flour (30g)
  • 1/4 cup granulated sugar (50g)
  • 1/4 cup vegetable oil (57g)
  • 1/2 teaspoon ground cinnamon (1g)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides.
  3. In a bowl, mix 1 cup graham cracker crumbs with 1/4 cup melted butter until combined.
  4. Press the graham cracker mixture firmly into the bottom of the prepared baking pan to form the crust.
  5. In a large mixing bowl, beat 16 oz softened cream cheese with 1/2 cup granulated sugar until smooth.
  6. Add 1 teaspoon vanilla extract and 2 large eggs to the cream cheese mixture; mix until fully incorporated.
  7. Pour the cream cheese mixture over the graham cracker crust, spreading evenly.
  8. In a separate bowl, toss 2 cups diced apples with 1/4 cup granulated sugar and 1 teaspoon ground cinnamon.
  9. Evenly distribute the apple mixture over the cream cheese layer.
  10. In another bowl, combine 1/4 cup all-purpose flour, 1/4 cup granulated sugar, 1/4 cup melted butter, and 1/2 teaspoon ground cinnamon to make the topping.
  11. Sprinkle the topping evenly over the apple layer.
  12. Bake in the preheated oven for 35-40 minutes, or until the cheesecake is set and the top is golden brown.
  13. Remove from the oven and allow to cool to room temperature in the pan.
  14. Once cooled, refrigerate the bars for at least 2 hours or until fully chilled.
  15. Use the parchment paper overhang to lift the bars out of the pan.
  16. Cut into squares and serve.

Notes

  • For a more flavorful crust, consider adding ground cinnamon to the graham cracker crumbs and butter mixture before pressing into the pan.
  • Enhance the apple flavor by using a mix of sweet and tart apples for a more complex taste in the dessert.
  • To achieve a sweeter topping, adjust the amount of granulated sugar in the topping mixture to suit your taste preference.
