Instructions
- Preheat the oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides.
- In a bowl, mix 1 cup graham cracker crumbs with 1/4 cup melted butter until combined.
- Press the graham cracker mixture firmly into the bottom of the prepared baking pan to form the crust.
- In a large mixing bowl, beat 16 oz softened cream cheese with 1/2 cup granulated sugar until smooth.
- Add 1 teaspoon vanilla extract and 2 large eggs to the cream cheese mixture; mix until fully incorporated.
- Pour the cream cheese mixture over the graham cracker crust, spreading evenly.
- In a separate bowl, toss 2 cups diced apples with 1/4 cup granulated sugar and 1 teaspoon ground cinnamon.
- Evenly distribute the apple mixture over the cream cheese layer.
- In another bowl, combine 1/4 cup all-purpose flour, 1/4 cup granulated sugar, 1/4 cup melted butter, and 1/2 teaspoon ground cinnamon to make the topping.
- Sprinkle the topping evenly over the apple layer.
- Bake in the preheated oven for 35-40 minutes, or until the cheesecake is set and the top is golden brown.
- Remove from the oven and allow to cool to room temperature in the pan.
- Once cooled, refrigerate the bars for at least 2 hours or until fully chilled.
- Use the parchment paper overhang to lift the bars out of the pan.
- Cut into squares and serve.
