  • 3 cups (720 ml) oats
  • 1 cup (240 ml) raw almonds, roughly chopped
  • 1 cup (240 ml) walnuts, roughly chopped
  • ½ cup (120 ml) pumpkin seeds
  • ½ cup (120 ml) dried coconut
  • ½ cup (120 ml) raisins, soaked in warm water for 10 minutes
  • ¼ cup (60 ml) hemp seeds
  • ¼ cup (60 ml) ground flax
  • 1 tbsp (15 ml) cinnamon
  • 3/4 tsp (4 ml) salt
  • ½ cup (120 ml) tahini
  • ½ cup (120 ml) vegetable oil
  • ½ cup (120 ml) maple syrup
  • 1 tbsp (15 ml) vanilla
  • 1 large apple, grated and water squeezed out

Instructions

  1. Set your oven to 320°F with the convection setting.
  2. In a big mixing bowl, combine all the dry ingredients together.
  3. In a small saucepan, mix the wet ingredients and heat them over medium flame until they blend thoroughly.
  4. Pour the wet mixture over the dry ingredients, stirring until everything is well-coated.
  5. Grate the apple using a box grater and press out as much liquid as possible.
  6. Gently mix the grated apple into the mixture.
  7. Distribute the mixture evenly across two baking trays, ensuring it’s spread thinly for even baking.
  8. Bake for 20 minutes, then rotate the trays 180 degrees to promote even cooking. Continue baking for another 10-15 minutes until it’s golden and feels dry. It’s okay to bake a bit longer if needed to account for the apple’s moisture.
  9. Allow the granola to cool down entirely before using a firm spatula to remove it from the trays.
  10. Store the granola in mason jars and keep them in a pantry.

  • Ensure you remove excess liquid from the grated apple to prevent the granola from getting soggy.
