Ingredients
- – 2 cups (480 ml) rolled old-fashioned oats
- – 1 teaspoon (5 ml) cinnamon
- – 1 teaspoon (5 ml) baking powder
- – ½ teaspoon (2.5 ml) sea salt
- – 2 cups (480 ml) non-dairy milk, I like using unsweetened vanilla almond milk
- – ½ cup (120 ml) unsweetened applesauce
- – ¼ cup (60 ml) maple syrup
- – 1 tablespoon (15 ml) ground flaxseed
- – 1 tablespoon (15 ml) vegetable oil
- – 1 teaspoon (5 ml) vanilla extract
- – 1 cup (240 ml) diced apple, divided
- – ½ cup (120 ml) raisins
Instructions
- Set your oven to 375°F and coat an 8×8 baking dish with non-stick spray.
- In a large mixing bowl, combine the rolled oats, cinnamon, baking powder, and sea salt. Add the almond milk, applesauce, maple syrup, ground flaxseed, vegetable oil, and vanilla extract, stirring well.
- Gently incorporate the raisins and ¾ cup of the chopped apple pieces into the mixture.
- Transfer the mixture to the prepared baking dish and scatter the remaining ¼ cup of apple pieces over the top.
- Place in the oven and bake for about 40 minutes, or until the center is firm and a toothpick inserted comes out clean. Let the oatmeal bake cool slightly before slicing and serving. Enjoy with a drizzle of almond butter, extra almond milk, or a bit more maple syrup if desired.
- Keep leftovers in an airtight container in the refrigerator for up to four days. To warm up the entire oatmeal bake, cover it with foil and heat in a 350°F oven for around 20 minutes. For single servings, use a 350°F oven or toaster oven for 5-10 minutes or microwave for 1 minute.
