Ingredients

  • – 2 cups (480 ml) rolled old-fashioned oats
  • – 1 teaspoon (5 ml) cinnamon
  • – 1 teaspoon (5 ml) baking powder
  • – ½ teaspoon (2.5 ml) sea salt
  • – 2 cups (480 ml) non-dairy milk, I like using unsweetened vanilla almond milk
  • – ½ cup (120 ml) unsweetened applesauce
  • – ¼ cup (60 ml) maple syrup
  • – 1 tablespoon (15 ml) ground flaxseed
  • – 1 tablespoon (15 ml) vegetable oil
  • – 1 teaspoon (5 ml) vanilla extract
  • – 1 cup (240 ml) diced apple, divided
  • – ½ cup (120 ml) raisins

Instructions

  1. Set your oven to 375°F and coat an 8×8 baking dish with non-stick spray.
  2. In a large mixing bowl, combine the rolled oats, cinnamon, baking powder, and sea salt. Add the almond milk, applesauce, maple syrup, ground flaxseed, vegetable oil, and vanilla extract, stirring well.
  3. Gently incorporate the raisins and ¾ cup of the chopped apple pieces into the mixture.
  4. Transfer the mixture to the prepared baking dish and scatter the remaining ¼ cup of apple pieces over the top.
  5. Place in the oven and bake for about 40 minutes, or until the center is firm and a toothpick inserted comes out clean. Let the oatmeal bake cool slightly before slicing and serving. Enjoy with a drizzle of almond butter, extra almond milk, or a bit more maple syrup if desired.
  6. Keep leftovers in an airtight container in the refrigerator for up to four days. To warm up the entire oatmeal bake, cover it with foil and heat in a 350°F oven for around 20 minutes. For single servings, use a 350°F oven or toaster oven for 5-10 minutes or microwave for 1 minute.
