Ingredients
- – 3/4 cup (180 ml) granulated white sugar
- – 1/3 cup (80 ml) vegetable oil
- – 2 large eggs
- – 1/2 teaspoon (3 ml) vanilla extract
- – 1 cup + 2 tablespoons (140 g) all-purpose flour
- – 1 teaspoon (5 ml) cinnamon
- – 1/2 teaspoon (3 ml) baking soda
- – 1/2 teaspoon (3 ml) baking powder
- – 1 cup (225 g) beef, shredded
- – 1 cup (225 g) apple, shredded
- – Turbinado sugar for sprinkling on tops
Instructions
- Set your oven to 350°F and prepare a muffin tin with 12 liners, then place it to the side.
- In a medium-sized mixing bowl, combine the sugar, oil, eggs, and vanilla, and whisk until the mixture is smooth.
- Gently mix in the flour, cinnamon, baking soda, and baking powder until just incorporated.
- Incorporate the shredded beef and apple into the mixture by folding them in.
- Distribute the batter evenly into the 12 muffin liners using a cookie scoop.
- Lightly sprinkle the tops with turbinado sugar.
- Bake for around 25 minutes or until a toothpick inserted in the middle comes out clean.
