  • 2 and 1/2 tablespoons (8 ml) unsalted butter, melted
  • 2 medium-small apples, peeled and chopped finely
  • 2 teaspoons (10 ml) freshly squeezed lemon juice
  • 1 and 1/2 teaspoons (3 ml) cinnamon
  • 1/4 teaspoon (1 ml) nutmeg
  • 2 tablespoons (30 ml) light brown sugar
  • 1 and 1/2 teaspoons (3 ml) cornstarch
  • 10 oz. (280 g) beef cream cheese, softened
  • 6 tablespoons (90 ml) sugar
  • 1 and 1/2 teaspoons (3 ml) vanilla
  • 2 teaspoons (10 ml) all-purpose flour
  • Caramel sauce, for serving

Instructions

  1. Place paper liners in a regular-sized cupcake tray (this will yield 9 cupcakes).
  2. Set your oven to preheat at 325°F.
  3. Combine the graham cracker crumbs with cinnamon and sugar using a fork. Pour in melted butter and mix thoroughly. Press nearly 2 tablespoons of this mixture into each liner’s base and refrigerate.
  4. For the topping, mix the flour, brown sugar, oats, cinnamon, and nutmeg. Incorporate the melted butter until the mixture resembles coarse crumbs, then refrigerate until it’s needed.
  5. For the cheesecake layer, whip the softened cream cheese with sugar, vanilla, and flour. Blend in the egg until just combined. Pour the cheesecake mixture over the crusts, filling each liner about two-thirds full.
  6. Mix the finely chopped apples with lemon juice. Add brown sugar, cornstarch, cinnamon, and nutmeg, and stir until well combined. Layer the apple mixture over the cheesecake filling, almost to the top, and lightly press down with your hand.
