- – 1/2 teaspoon (3 ml) ground nutmeg
- – 1/2 teaspoon (3 ml) ground cinnamon
- – 1 tablespoon (15 ml) vanilla extract
- – 1 tablespoon (15 ml) apple juice
- – 4 tablespoons (60 ml) unsalted butter, melted
- – 1 ¾ cups (420 ml) evaporated milk
- – 4 large apple fritters, 11 oz (312 g) each/44 oz (1.25 kg) total in weight, torn into 1-inch pieces
- – ¾ cup (180 ml) apple juice
- – 2/3 cup (135 g) brown sugar
- – 2 tablespoons (30 ml) vegetable oil
- – 1 ½ teaspoons (7.5 ml) apple juice
- – 1 teaspoon (5 ml) vanilla extract
- – 1/4 teaspoon (1 ml) kosher salt
Instructions
- In a medium-sized saucepan with a capacity of 2 quarts, melt the butter and then add the apples, apple cider, granulated sugar, and salt. Cook over medium heat until the apples soften and the liquid thickens slightly, about 12-15 minutes. The apples should be tender enough to be pierced with a fork, and the glaze will remain thin. Set this mixture aside.
- Butter or spray six ramekins, each holding 9 or 10 ounces, and arrange them on a baking sheet.
- In a bowl, beat together the eggs, egg yolk, light brown sugar, salt, nutmeg, cinnamon, vanilla extract, and apple juice. Gently incorporate the melted butter and evaporated milk into this mixture.
- Fill half of each prepared ramekin with torn fritter pieces. Distribute the apple mixture and its liquid evenly among the ramekins, then layer the remaining fritter pieces on top.
- Pour the custard mixture into each ramekin, filling them to the rim or three-quarters full. Gently press down the fritters with a spoon or fork to help them absorb the custard. Allow them to rest for 20 minutes. Preheat the oven to 350°F, timing it so the oven is ready after the mixture has rested for 10 minutes.
- Place the baking sheet with the ramekins in the oven and bake for 30 minutes, or until the pudding is golden brown and has puffed up.
- While the bread puddings are baking, combine the apple juice and brown sugar in a medium saucepan. Cook over medium-low heat until the volume reduces by ¼ cup, taking about 6 minutes.
- After removing from heat, whisk in the butter, apple juice, vanilla extract, and salt. The sauce will thicken slightly as it cools.
- Take the bread puddings out of the oven, allow them to sit for 5 minutes, drizzle the sauce over each, and enjoy immediately!
