Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 2 medium apples, peeled and diced (about 2 cups)
  • 1 cup chocolate chips
  • 1/2 cup raisins (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and both sugars until light and fluffy, about 3 minutes.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
  5. Gradually add dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the oats, diced apples, chocolate chips, and if using, raisins and nuts.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing cookies about 2 inches apart.
  8. Bake for 12-15 minutes, or until edges are lightly golden but centers still look slightly soft.
  9. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

  • For best results, use firm apples that hold their shape when baked, such as Granny Smith, Honeycrisp, or Braeburn.
  • Make sure to dice the apples into small pieces (about 1/4 inch) for even distribution.
  • The cookie dough can be refrigerated for up to 3 days before baking.
