  • 25 cup white sugar (50 g)
  • 5 teaspoon (3 ml) ground cinnamon
  • 4 teaspoons (20 ml) butter

Instructions

  1. Heat your oven to 350°F (175°C). Grease 18 muffin tins lightly or line them with paper cups.
  2. Combine the flour, sugar, pumpkin pie spice, baking soda, and salt by sifting them together in a big bowl.
  3. In another bowl, whisk the eggs, pumpkin puree, and vegetable oil until well blended.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Gently fold in the chopped apples.
  6. Fill the muffin tins with the batter.
  7. In a small bowl, combine the flour, sugar, and cinnamon for the topping.
  8. Work the butter into this mixture until it looks like coarse crumbs.
  9. Distribute the topping evenly over the muffin batter.
