- 5 teaspoon (3 ml) ground cinnamon
- 4 teaspoons (20 ml) butter
Instructions
- Heat your oven to 350°F (175°C). Grease 18 muffin tins lightly or line them with paper cups.
- Combine the flour, sugar, pumpkin pie spice, baking soda, and salt by sifting them together in a big bowl.
- In another bowl, whisk the eggs, pumpkin puree, and vegetable oil until well blended.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Gently fold in the chopped apples.
- Fill the muffin tins with the batter.
- In a small bowl, combine the flour, sugar, and cinnamon for the topping.
- Work the butter into this mixture until it looks like coarse crumbs.
- Distribute the topping evenly over the muffin batter.
- Place in the preheated oven and bake for 35 to 40 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
