Ingredients

- – 2/3 cup (160 ml) vegetable oil
- – 2 large eggs, room temperature
- – 3/4 cup (150g) brown sugar, packed (light or dark)
- – 3/4 cup (150g) granulated sugar
- – 1/2 cup (120 ml) sour cream, room temperature
- – 1 tsp. (5 ml) pure vanilla extract
- – 2-3 large honeycrisp apples, grated using the large holes on a box grater, ~1 1/2 cups (375 ml) (can keep the skin on)
- – 1/4 cup (60g) unsalted butter
- – 1/2 cup (100g) dark brown sugar, packed
- – 2 Tbsp. (30 ml) heavy cream
- – 1/2 tsp. (2.5 ml) pure vanilla extract
- – 1 cup (120g) powdered sugar, sifted
Instructions
- Begin by setting your oven to 350°F and prepare a 9×9-inch light-colored nonstick baking dish by lining it with parchment paper, then set aside.
- In a sizable bowl, combine the flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves with a whisk until well mixed.
- In another bowl, blend the vegetable oil, eggs, brown sugar, granulated sugar, sour cream, and vanilla extract until smooth.
- Add the wet mixture into the dry mixture and gently mix until just combined.
- Incorporate the grated apples into the batter by folding them in.
- Transfer the batter into the prepared baking dish.
- Place in the oven and bake for 35-40 minutes, checking with a toothpick to ensure it comes out clean from the center. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
- For the icing, heat the butter, brown sugar, and heavy cream in a medium saucepan over medium heat, stirring until the mixture is smooth and begins to gently boil.
- Remove from heat and incorporate the vanilla and powdered sugar by whisking them in.
- Drizzle the icing over the cake while it’s still slightly warm so that the icing seeps into the cake.
