  • – 1/8 tsp. (0.5 ml) ground cloves
  • – 2/3 cup (160 ml) vegetable oil
  • – 2 large eggs, room temperature
  • – 3/4 cup (150g) brown sugar, packed (light or dark)
  • – 3/4 cup (150g) granulated sugar
  • – 1/2 cup (120 ml) sour cream, room temperature
  • – 1 tsp. (5 ml) pure vanilla extract
  • – 2-3 large honeycrisp apples, grated using the large holes on a box grater, ~1 1/2 cups (375 ml) (can keep the skin on)
  • – 1/4 cup (60g) unsalted butter
  • – 1/2 cup (100g) dark brown sugar, packed
  • – 2 Tbsp. (30 ml) heavy cream
  • – 1/2 tsp. (2.5 ml) pure vanilla extract
  • – 1 cup (120g) powdered sugar, sifted

Instructions

  1. Begin by setting your oven to 350°F and prepare a 9×9-inch light-colored nonstick baking dish by lining it with parchment paper, then set aside.
  2. In a sizable bowl, combine the flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves with a whisk until well mixed.
  3. In another bowl, blend the vegetable oil, eggs, brown sugar, granulated sugar, sour cream, and vanilla extract until smooth.
  4. Add the wet mixture into the dry mixture and gently mix until just combined.
  5. Incorporate the grated apples into the batter by folding them in.
  6. Transfer the batter into the prepared baking dish.
