- 1 1/2 pounds fresh salmon fillets, skin removed
- 1 cup ricotta cheese, drained
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon zest
- 2 cloves garlic, minced
- 1/4 cup fresh spinach, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Kitchen twine for securing rolls
- Lemon wedges for serving
Instructions
- Slice the salmon fillets into thin, rectangular pieces about 1/4 inch thick.
- In a medium bowl, combine the drained ricotta, chopped dill, lemon zest, minced garlic, and chopped spinach. Mix well.
- Lay the salmon pieces flat and spread a thin layer of the ricotta mixture on each piece.
- Carefully roll up each piece of salmon and secure with kitchen twine.
- Brush the salmon rolls with olive oil and season with salt and pepper.
- Preheat the grill to medium-high heat (approximately 375°F).
- Grill the salmon rolls for 3-4 minutes per side, turning gently until they reach an internal temperature of 145°F.
- Remove from the grill, carefully cut off the twine, and serve immediately with lemon wedges.
