  • 1 cup ricotta cheese, drained
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 1/4 cup fresh spinach, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Kitchen twine for securing rolls
  • Lemon wedges for serving

Instructions

  1. Slice the salmon fillets into thin, rectangular pieces about 1/4 inch thick.
  2. In a medium bowl, combine the drained ricotta, chopped dill, lemon zest, minced garlic, and chopped spinach. Mix well.
  3. Lay the salmon pieces flat and spread a thin layer of the ricotta mixture on each piece.
  4. Carefully roll up each piece of salmon and secure with kitchen twine.
  5. Brush the salmon rolls with olive oil and season with salt and pepper.
  6. Preheat the grill to medium-high heat (approximately 375°F).
  7. Grill the salmon rolls for 3-4 minutes per side, turning gently until they reach an internal temperature of 145°F.
  8. Remove from the grill, carefully cut off the twine, and serve immediately with lemon wedges.
