Description

An iconic Roman dish that celebrates simplicity with pasta, Pecorino Romano cheese, and freshly cracked black pepper.

Ingredients

  • Spaghetti (or preferred pasta)
  • Pecorino Romano cheese, freshly grated
  • Freshly cracked black pepper
  • Salt (for boiling water)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente.
  2. Reserve some pasta water, then drain the pasta.
  3. In a large skillet over low heat, combine the hot pasta with grated Pecorino Romano cheese and freshly cracked black pepper.
  4. Add reserved pasta water a little at a time until a creamy sauce forms.
  5. Toss well to combine and serve immediately.

Notes

Using freshly cracked black pepper and grating the cheese just before cooking enhances flavor. Adjust pepper and cheese amounts to taste.
