- 2 pounds of outside skirt steak, sliced into ½-inch strips
- ½ teaspoon of chili powder
- 1 teaspoon of ground cumin
- ½ teaspoon of salt
- ½ teaspoon of ground black pepper
- 1 teaspoon of garlic powder
- Pinch of cayenne pepper
- 3 tablespoons of olive oil (for cooking)
- 1 red bell pepper, deseeded and sliced into thin strips
- 1 yellow bell pepper, deseeded and sliced into thin strips
- 1 green bell pepper, deseeded and sliced into thin strips
- 1 medium yellow onion, sliced
- 2–3 medium tomatoes, diced

Instructions
- Pat the skirt steak dry with paper towels, then slice it into ½-inch strips.
- In a small ramekin, combine the chili powder, ground cumin, cayenne, salt, ground black pepper, and garlic powder to create the seasoning mixture.
- Preheat your griddle on medium-high heat.
- Once the griddle is hot, add about 2 tablespoons of olive oil on the surface and spread it around.
- Spread the steak strips evenly across the griddle to sear, letting them sit for one minute.
- After a minute, move the steak around to brown all sides for about 2 minutes.
- Push the steak to one side of the griddle and add the sliced onions to the empty side. Cook them for about 2-3 minutes without mixing.
- Once the onions become soft, combine them with the steak.
- Add the sliced bell peppers (red, yellow, and green) along with diced tomatoes. Stir everything together.
- Allow the vegetables to cook for another 2-4 minutes, ensuring they remain slightly tender yet bright and crunchy.
- Turn off the heat once everything is mixed and cooked to your liking.
- Serve the fajitas immediately with warm tortillas and optional garnishes like sour cream, guacamole, or salsa.
Notes
For added flavor, consider marinating the steak beforehand with olive oil and spices. Let the steak rest after cooking for juicy bites.
