Description

A rich and creamy comfort meal that combines tender gnocchi with crispy bacon and melted cheddar cheese, perfect for cold winter evenings.


Ingredients

  • 810 slices bacon, cooked and chopped
  • 1 tbsp butter or olive oil
  • 1 large onion, diced
  • 2 large carrots, peeled and sliced
  • 4 cups chicken broth
  • 12 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (or 4 cloves minced garlic)
  • ¼ tsp dried thyme
  • ½1 tsp red chili flakes (optional)
  • 16 oz gnocchi
  • 2 cups heavy cream or half-and-half
  • 2 cups shredded cheddar cheese (medium or sharp)

Instructions

  1. Cook the bacon until crispy. Once done, chop it and set it aside to add later.
  2. In a large pot, heat the butter or olive oil over medium heat. Add the diced onion and sliced carrots. Sauté until they become tender, about 5-7 minutes.
  3. Pour in the chicken broth and bring the mixture to a simmer.
  4. Stir in the heavy cream, along with the salt, black pepper, garlic powder (or minced garlic), dried thyme, and red chili flakes. Mix in the shredded cheese until it fully melts.
  5. Add the gnocchi and cook for about 2 minutes, or until they are soft.
  6. Finally, stir in the chopped bacon, and adjust the seasoning to your taste. Serve the soup hot.

Notes

For a lighter version, you can use half-and-half instead of heavy cream. Store leftovers in an airtight container for up to three days.
