A delicious bacon-wrapped meatloaf stuffed with cheese, perfect for family dinners or meal prep.
Ingredients

- 2 pounds ground beef
- 1 cup breadcrumbs
- 2 eggs
- 1 onion, finely diced
- 3 cloves garlic, minced
- 8–10 slices bacon
- 2 cups shredded cheese
- 1/2 cup barbecue sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat oven to 375°F (190°C)
- Mix ground beef, breadcrumbs, eggs, onion, garlic, and seasonings in a large bowl
- Spread meat mixture into a rectangle on parchment paper
- Layer cheese in the center, leaving borders
- Roll the meatloaf using the parchment paper, sealing edges well
- Wrap with bacon slices
- Place in a loaf pan or baking dish
- Bake for 60-70 minutes until internal temperature reaches 160°F (71°C)
- Brush with barbecue sauce in the last 10 minutes
- Let rest for 10 minutes before slicing
Notes
- Can be prepared up to 24 hours in advance
- Seal edges well to prevent cheese leakage
- For keto version, use pork rinds instead of breadcrumbs
- Can substitute ground turkey with added olive oil
- Reheat individual slices in a covered skillet for best results
