Ingredients

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
  2. Add the chopped onion to the pot and sauté until softened.
  3. Add the diced potatoes and chicken broth to the pot, bringing it to a boil. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Mash some of the potatoes in the pot for a thicker consistency.
  5. Stir in the milk and season with salt and pepper.
  6. Serve hot, garnished with cooked bacon and chives or green onions if desired.
