Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the drippings in the pot.
- Add the chopped onion to the pot and sauté until softened.
- Add the diced potatoes and chicken broth to the pot, bringing it to a boil. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Mash some of the potatoes in the pot for a thicker consistency.
- Stir in the milk and season with salt and pepper.
- Serve hot, garnished with cooked bacon and chives or green onions if desired.
