Delicious bacon-wrapped jalapeño poppers filled with creamy cheese, perfect for a keto snack.


Ingredients

  • 12 large jalapeños
  • 8 oz cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 12 slices bacon, cut in half

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut the jalapeños in half lengthwise and remove seeds and membranes using a spoon. Wear gloves to avoid irritation.
  3. In a medium bowl, combine the softened cream cheese, cheddar cheese, Monterey Jack cheese, garlic powder, salt, and pepper. Mix until well combined.
  4. Spoon the cream cheese mixture evenly into each jalapeño half.
  5. Wrap each stuffed jalapeño half with a half-slice of bacon. Secure with a toothpick if needed.
  6. Place the wrapped jalapeños on the prepared baking sheet.
  7. Bake for 20-25 minutes, or until the bacon is crispy and the jalapeños are tender.
  8. Let cool slightly before serving.
