Instructions
- Season the venison with salt and pepper
- Wrap the backstrap with bacon slices
- Sear the meat in a hot pan until bacon is crispy
- Finish cooking to desired temperature (130-135°F for medium-rare)
- Sauté mushrooms with garlic and butter
- Add cream and simmer until sauce thickens
- Slice venison and serve with mushroom sauce
