A colorful and healthy baked marinated chicken salad featuring chicken breasts, fresh avocados, mozzarella balls, and a tangy balsamic vinaigrette.
Ingredients

- 1 lb Chicken breasts
- 1 cup Mozzarella balls
- 1 Avocado, diced
- 1 cup Cherry tomatoes, halved
- 4 cups Baby spinach
- 1/4 cup Olive oil
- 1/4 cup Balsamic vinegar
- 2 tbsp Honey
- 1 tsp Salt
- 1/2 tsp Black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Marinate the chicken breasts in olive oil, balsamic vinegar, honey, salt, and pepper for at least 30 minutes.
- Bake the marinated chicken in the oven for 25-30 minutes or until cooked through.
- While the chicken is baking, prepare the salad by combining the baby spinach, diced avocados, halved cherry tomatoes, and mozzarella balls in a large bowl.
- Once the chicken is done, let it cool slightly before slicing it into strips.
- Add the chicken on top of the salad and drizzle with additional balsamic vinaigrette if desired.
- Serve immediately and enjoy your healthy meal!
Notes
For added flavor, consider using fresh herbs in the salad. Store leftovers in an airtight container in the refrigerator for up to two days.
