Traditional Polish paczki – sweet, fluffy yeasted donuts perfect for special occasions and celebrations.
Ingredients

- 4 cups all-purpose flour
- 2¼ teaspoons active dry yeast
- 1 cup warm milk
- ½ cup granulated sugar
- 4 large egg yolks
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- Vegetable oil for frying
- Powdered sugar for dusting
- Your choice of fruit jam for filling
Instructions
- Activate yeast in warm milk with a pinch of sugar until foamy
- Mix flour, sugar, and salt in a large bowl
- Add egg yolks, melted butter, and vanilla to the yeast mixture
- Combine wet and dry ingredients to form a soft dough
- Knead until smooth and elastic
- Let rise in a warm place until doubled (about 1 hour)
- Roll out dough and cut into circles
- Let shaped dough rise again for 30 minutes
- Fry in oil at 350°F until golden brown
- Fill with jam and dust with powdered sugar
Notes
- Dough can be prepared the night before and refrigerated
- Ensure yeast is fresh for proper rising
- Can be air fried at 350°F for 8-10 minutes
- Make mini versions using a 2-inch cutter
- They’re done when golden brown and sound hollow when tapped
