  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon zest
  • Salt and pepper to taste
  • 2 ripe avocados
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro
  • 1 clove garlic, minced
  • 2 tablespoons olive oil

Instructions

  1. If using fresh salmon, finely chop into small pieces or pulse briefly in a food processor.
  2. In a bowl, combine salmon, breadcrumbs, egg, dill, lemon zest, salt, and pepper. Mix well.
  3. Form the mixture into meatballs, about 1.5 inches in diameter.
  4. Preheat oven to 375°F and place meatballs on a lined baking sheet.
  5. Bake for 12-15 minutes until meatballs reach an internal temperature of 145°F and flake easily with a fork.
  6. While meatballs are cooking, prepare the avocado sauce by blending avocados, lime juice, cilantro, garlic, and olive oil until smooth.
  7. Serve the meatballs hot with avocado sauce on the side or drizzled on top.

  • For an air fryer option, cook at 375°F for 8-10 minutes.
