Description

A nourishing and customizable bowl featuring baked tofu and vibrant mixed vegetables over a bed of wholesome grains.


Ingredients

Scale
  • 1 block of firm tofu
  • 2 cups of mixed vegetables (broccoli, bell peppers, and carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Cooked grain (quinoa, brown rice, or your choice)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Press the tofu to remove excess moisture, then cut it into cubes.
  3. In a bowl, toss the tofu cubes with olive oil, soy sauce, garlic powder, onion powder, salt, and pepper.
  4. Spread the tofu on one side of a baking sheet.
  5. Toss the mixed vegetables in olive oil, salt, and pepper, and spread them on the other side of the baking sheet.
  6. Bake for 25-30 minutes, flipping the tofu and vegetables halfway through until they are crispy and golden.
  7. Serve the baked tofu and veggies over cooked grain. Enjoy!

Notes

For an enhanced flavor, let the marinated tofu sit for at least 15 minutes before baking. Consider using seasonal vegetables for variety.
