A savory delight of baked tofu paired with a refreshing salsa verde, perfect for family dinners or casual gatherings.
Ingredients

- 400g firm tofu
- 2 Tbsp soy sauce
- 1 Tbsp oil
- 2 Tsp cumin
- 1 Tsp paprika
- Salt to taste
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 Tsp chili powder
- 2 Tbsp tomato paste
- 1/3 cup pineapple juice
- 1/2 Tbsp soy sauce
- A bunch of cilantro or parsley
- 2 cloves garlic for salsa, minced
- 4 Tbsp vegan yogurt
- 4 Tbsp vegan mayo
- 1/2 lemon, juiced
- 1 Tsp cumin for salsa
- 1 Tsp agave
Instructions
- Preheat your oven to 350°F (175°C).
- Pat the tofu dry and shred it using a grater. Toss the shredded tofu with soy sauce, oil, cumin, paprika, and salt in a bowl.
- Spread the seasoned tofu evenly on a baking sheet and bake for 30 minutes, stirring occasionally to achieve even browning.
- While the tofu bakes, sauté chopped onion and minced garlic in a splash of oil until softened.
- Stir in additional cumin, paprika, and chili powder, cooking for another 2-3 minutes.
- Mix in tomato paste, pineapple juice, and a half tablespoon of soy sauce. Bring to a bubble and then reduce the heat.
- Once the tofu is done baking, add it to the sauce and stir to coat each piece.
- For the salsa verde, blend cilantro or parsley with garlic, vegan yogurt, vegan mayo, lemon juice, cumin, agave, and salt until smooth.
- Serve the baked tofu hot with a generous drizzle of salsa verde on top.
Notes
For extra flavor, let the grated tofu marinate in the spices for 15-20 minutes before baking.
