Baked Tofu with Salsa Verde

A savory delight of baked tofu paired with a refreshing salsa verde, perfect for family dinners or casual gatherings.


Ingredients

  • 400g firm tofu
  • 2 Tbsp soy sauce
  • 1 Tbsp oil
  • 2 Tsp cumin
  • 1 Tsp paprika
  • Salt to taste
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/2 Tsp chili powder
  • 2 Tbsp tomato paste
  • 1/3 cup pineapple juice
  • 1/2 Tbsp soy sauce
  • A bunch of cilantro or parsley
  • 2 cloves garlic for salsa, minced
  • 4 Tbsp vegan yogurt
  • 4 Tbsp vegan mayo
  • 1/2 lemon, juiced
  • 1 Tsp cumin for salsa
  • 1 Tsp agave

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pat the tofu dry and shred it using a grater. Toss the shredded tofu with soy sauce, oil, cumin, paprika, and salt in a bowl.
  3. Spread the seasoned tofu evenly on a baking sheet and bake for 30 minutes, stirring occasionally to achieve even browning.
  4. While the tofu bakes, sauté chopped onion and minced garlic in a splash of oil until softened.
  5. Stir in additional cumin, paprika, and chili powder, cooking for another 2-3 minutes.
  6. Mix in tomato paste, pineapple juice, and a half tablespoon of soy sauce. Bring to a bubble and then reduce the heat.
  7. Once the tofu is done baking, add it to the sauce and stir to coat each piece.
  8. For the salsa verde, blend cilantro or parsley with garlic, vegan yogurt, vegan mayo, lemon juice, cumin, agave, and salt until smooth.
  9. Serve the baked tofu hot with a generous drizzle of salsa verde on top.

Notes

For extra flavor, let the grated tofu marinate in the spices for 15-20 minutes before baking.
