Ingredients

Scale
  • 2 1/4 cups (270g) white whole wheat flour or all-purpose flour
  • 1 cup (240ml) milk
  • 1/3 cup (67g) sugar
  • 1/4 cup (50g) brown sugar
  • 2 teaspoons (10 ml) baking soda
  • 1 teaspoon (5 ml) baking powder
  • 1 teaspoon (5 ml) salt
  • 1 cup (240g) whole fat or low-fat plain yogurt
  • 2 teaspoons (10 ml) vanilla extract
  • 2 eggs
  • 1/4 cup (60ml) vegetable oil
  • 2 cups (260g) shredded zucchini
  • 3/4 cup (130g) mini chocolate chips + additional mini chocolate chips for garnish, if desired

Instructions

  1. Set your oven to 375°F and prepare your muffin tray by lining it with paper liners or coating it with a nonstick spray.
  2. In a big mixing bowl, combine the flour, sugar, brown sugar, baking soda, baking powder, and salt, mixing thoroughly.
  3. Add the yogurt, milk, and vanilla essence, stirring just until the ingredients begin to mix together.
  4. Incorporate the eggs and vegetable oil, stirring until everything is well blended.
  5. Carefully mix in the grated zucchini and mini chocolate chips.
  6. Pour the mixture evenly into the muffin tray, filling each slot between three-quarters full to full, depending on the tray size.
  7. Place in the oven and bake for 15-20 minutes or until a toothpick inserted in the center mostly comes out clean.
  8. Keep any extra muffins in a container that seals tightly.

Notes

  • Use white whole wheat flour for added fiber and nutrients in a healthier option.
  • Adjust sugar amount based on preference for sweetness; brown sugar adds richer flavor.
  • Choose low-fat yogurt for lighter texture or whole fat yogurt for richer taste in muffins.
