- 3/4 cup (130g) mini chocolate chips + additional mini chocolate chips for garnish, if desired
Instructions
- Set your oven to 375°F and prepare your muffin tray by lining it with paper liners or coating it with a nonstick spray.
- In a big mixing bowl, combine the flour, sugar, brown sugar, baking soda, baking powder, and salt, mixing thoroughly.
- Add the yogurt, milk, and vanilla essence, stirring just until the ingredients begin to mix together.
- Incorporate the eggs and vegetable oil, stirring until everything is well blended.
- Carefully mix in the grated zucchini and mini chocolate chips.
- Pour the mixture evenly into the muffin tray, filling each slot between three-quarters full to full, depending on the tray size.
- Place in the oven and bake for 15-20 minutes or until a toothpick inserted in the center mostly comes out clean.
