Description

A vibrant balsamic steak salad featuring marinated flank steak, fresh vegetables, and a zesty dressing that creates a colorful centerpiece perfect for gatherings.


Ingredients

  • 3/4 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 teaspoons dried oregano
  • 2 cloves garlic, grated
  • 1 teaspoon salt
  • 2 tablespoons olive oil, divided
  • 1 pound flank steak
  • 2 ears corn, husked
  • 1 head romaine lettuce, chopped
  • 1 pint cherry tomatoes, halved
  • 2 small cucumbers, sliced into discs
  • 1/2 cup pickled red onions
  • 1/2 cup gorgonzola cheese crumbles
  • 1/4 cup fresh chives, finely chopped
  • 1/3 cup sunflower seeds

Instructions

  1. Whisk together balsamic vinegar, Dijon mustard, 1/4 cup olive oil, lemon juice, dried oregano, grated garlic, and salt until fully emulsified.
  2. Coat flank steak with one-third of dressing mixture in a shallow dish. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the marinated steak for 3 to 4 minutes per side, or until it reaches 135°F for medium-rare.
  4. Remove steak from heat, cover with foil, and rest for 10 minutes. Slice against the grain into 1/2-inch-thick pieces.
  5. Rub ears of corn with 1 tablespoon of olive oil. Place on a baking sheet and roast at 375°F for 25 minutes, then broil for 5 to 6 minutes turning every 2 minutes.
  6. When cool, cut the kernels from the cob.
  7. On a platter, arrange chopped romaine lettuce, topped with roasted corn, halved cherry tomatoes, cucumber slices, pickled red onions, gorgonzola crumbles, sliced steak, sunflower seeds, and fresh chives.
  8. Drizzle with reserved dressing and season with salt and pepper to taste.

Notes

Adjust dressing flavors to preference. Consider adding toasted sunflower seeds for extra crunch.
