- 3/4 cup balsamic vinegar
- 1/4 cup Dijon mustard
- 1/4 cup olive oil
- Juice of 1 lemon
- 2 teaspoons dried oregano
- 2 cloves garlic, grated
- 1 teaspoon salt
- 2 tablespoons olive oil, divided
- 1 pound flank steak
- 2 ears corn, husked
- 1 head romaine lettuce, chopped
- 1 pint cherry tomatoes, halved
- 2 small cucumbers, sliced into discs
- 1/2 cup pickled red onions
- 1/2 cup gorgonzola cheese crumbles
- 1/4 cup fresh chives, finely chopped
- 1/3 cup sunflower seeds
Instructions
- Whisk together balsamic vinegar, Dijon mustard, 1/4 cup olive oil, lemon juice, dried oregano, grated garlic, and salt until fully emulsified.
- Coat flank steak with one-third of dressing mixture in a shallow dish. Cover and marinate in the refrigerator for at least 30 minutes.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the marinated steak for 3 to 4 minutes per side, or until it reaches 135°F for medium-rare.
- Remove steak from heat, cover with foil, and rest for 10 minutes. Slice against the grain into 1/2-inch-thick pieces.
- Rub ears of corn with 1 tablespoon of olive oil. Place on a baking sheet and roast at 375°F for 25 minutes, then broil for 5 to 6 minutes turning every 2 minutes.
- When cool, cut the kernels from the cob.
- On a platter, arrange chopped romaine lettuce, topped with roasted corn, halved cherry tomatoes, cucumber slices, pickled red onions, gorgonzola crumbles, sliced steak, sunflower seeds, and fresh chives.
- Drizzle with reserved dressing and season with salt and pepper to taste.
Notes
Adjust dressing flavors to preference. Consider adding toasted sunflower seeds for extra crunch.
