  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract
  • 1 1/2 cups all-purpose flour (190g)
  • 1 teaspoon (5 ml) baking soda
  • 1/2 teaspoon (3 ml) baking powder
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) ground cinnamon
  • 1/4 cup plain yogurt or sour cream (60ml)
  • 1/2 cup chopped walnuts or pecans (optional) (60g)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan or line it with parchment paper.
  3. In a large bowl, combine mashed bananas, granulated sugar, and brown sugar.
  4. Add the melted butter to the banana mixture and stir until well combined.
  5. Beat in the eggs and vanilla extract until smooth.
  6. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  7. Gradually add the dry ingredients to the wet ingredients, stirring gently.
  8. Mix in the yogurt or sour cream until just combined.
  9. Fold in the chopped walnuts or pecans if using.
  10. Pour the batter into the prepared loaf pan and spread evenly.
  11. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  12. Remove from oven and let the loaf cool in the pan for 10 minutes.
