- 1 cup (240 ml) mashed ripe bananas (about 2–3 bananas)
- 1/2 cup granulated sugar (100g)
- 1/4 cup brown sugar, packed (55g)
- 1/2 cup unsalted butter, melted (113g)
- 2 large eggs
- 1 teaspoon (5 ml) vanilla extract
- 1 1/2 cups all-purpose flour (190g)
- 1 teaspoon (5 ml) baking soda
- 1/2 teaspoon (3 ml) baking powder
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) ground cinnamon
- 1/4 cup plain yogurt or sour cream (60ml)
- 1/2 cup chopped walnuts or pecans (optional) (60g)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large bowl, combine mashed bananas, granulated sugar, and brown sugar.
- Add the melted butter to the banana mixture and stir until well combined.
- Beat in the eggs and vanilla extract until smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring gently.
- Mix in the yogurt or sour cream until just combined.
- Fold in the chopped walnuts or pecans if using.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from oven and let the loaf cool in the pan for 10 minutes.
- Transfer the loaf to a wire rack to cool completely before slicing.
