Description

A flavor-packed dish featuring tender chicken, vibrant veggies, and a creamy, spicy sauce served over rice.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook the rice according to the package instructions. Set it aside once ready.
  2. Cut the chicken breast into bite-sized pieces.
  3. Season the chicken pieces with salt and pepper.
  4. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes.
  5. Mix the sauce ingredients in a small bowl and adjust to taste.
  6. Once the chicken is cooked, toss in the mixed veggies and cook for another 2-3 minutes until tender but crisp.
  7. Remove from heat, pour the sauce over the chicken and veggies, stirring to coat everything evenly.
  8. Serve over a mound of rice and enjoy!

Notes

Garnish with green onions or extra sriracha for added flavor and presentation.
