- 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup BBQ sauce
- 2 tbsp olive oil
- 1 tsp garlic powder
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup honey lime dressing
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh cilantro, chopped

Instructions
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- In a bowl, mix BBQ sauce, 1 tbsp olive oil, and garlic powder. Add chicken cubes and toss to coat. Marinate for at least 15 minutes.
- Thread marinated chicken onto skewers.
- Preheat grill to medium-high heat. Grill chicken skewers for 10-12 minutes, turning occasionally, until cooked through.
- In a large bowl, combine salad greens, tomatoes, cucumber, bell pepper, and red onion.
- Drizzle with remaining olive oil and honey lime dressing, toss to combine.
- Divide salad among plates, top with chicken skewers, sprinkle with feta cheese and cilantro.
- Serve immediately or prepare components separately for meal prep.
Notes
- You can bake the chicken skewers in the oven at 425°F for 15-18 minutes if you don’t have a grill.
- For meal prep, store the dressing separately and add just before serving.
- Feel free to substitute the feta cheese with your favorite cheese or omit for a dairy-free option.
