Ingredients

  • 1 tablespoon barbecue sauce
  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1 cup corn (canned or frozen)
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender.
  3. Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and cook the chicken for about 6-7 minutes on each side until cooked through. Brush the barbecue sauce on the chicken during the last few minutes of cooking.
  4. Let the chicken rest for a few minutes before slicing.
  5. Assemble the bowls by layering the roasted sweet potatoes, sliced chicken, corn, and avocado.
  6. Garnish with fresh cilantro if desired. Serve immediately.
