- 2 boneless, skinless chicken breasts
- 1 tablespoon barbecue sauce
- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 avocado, sliced
- 1 cup corn (canned or frozen)
- Fresh cilantro (for garnish, optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender.
- Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and cook the chicken for about 6-7 minutes on each side until cooked through. Brush the barbecue sauce on the chicken during the last few minutes of cooking.
- Let the chicken rest for a few minutes before slicing.
- Assemble the bowls by layering the roasted sweet potatoes, sliced chicken, corn, and avocado.
- Garnish with fresh cilantro if desired. Serve immediately.
Notes
For added crunch, consider sprinkling some toasted nuts or seeds before serving. Customize the barbecue sauce for a unique twist.
