- 2 lbs chicken breast or thighs, cut into 1.5-inch cubes
- 2 bell peppers, cut into chunks
- 1 red onion, cut into chunks
- 2 zucchini, sliced into rounds
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tbsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. For extra protection, wrap exposed ends with aluminum foil.
- In a large bowl, combine olive oil, minced garlic, lemon juice, oregano, paprika, salt, and pepper to create the marinade.
- Add chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, up to 4 hours for more flavor.
- Preheat grill to medium-high heat (approximately 400°F).
- Thread marinated chicken pieces onto skewers, alternating with bell peppers, red onion, and zucchini.
- Grill kabobs for 10-12 minutes, turning every 3-4 minutes, until chicken reaches 165°F internally and vegetables are tender with light char marks.
- Remove from grill and let rest for 5 minutes before serving.
Notes
- For best results, cut all ingredients in similar sizes to ensure even cooking.
- You can prepare the kabobs in advance and keep them refrigerated until ready to grill.
- Serve with rice, pita bread, or a fresh salad for a complete meal.
