Description
A comforting bowl of Bean with Bacon Soup that warms the soul with its blend of smoky bacon, tender beans, and fresh vegetables.
Ingredients

- 1 cup Great Northern beans (dried)
- 6 oz thick-cut bacon
- 1 medium onion (chopped)
- 2 carrots (chopped)
- 2 celery stalks (chopped)
- 3 cloves garlic (minced)
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Rinse the Great Northern beans under cold water. If using dried beans, soak them overnight.
- In a large pot over medium heat, cook the bacon until crispy. Remove the bacon but leave the drippings in the pot.
- Sauté the chopped onion, carrots, and celery in the bacon drippings for about five minutes. Add the minced garlic and sauté for an additional minute.
- Return the crispy bacon to the pot along with the soaked beans, chicken broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about one hour or until the beans are tender.
- Serve hot, garnished with fresh parsley if desired.
Notes
For a thicker soup, mash some of the beans with a fork and stir them back into the pot. Store leftovers in an airtight container for up to five days.
