A hearty and comforting beef barley soup filled with tender beef, rich vegetables, and pearl barley, perfect for chilly nights.
Ingredients

- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 cup pearl barley
- 1 can (14.5 oz) diced tomatoes
- 2 bay leaves
- 1 tsp thyme
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the cubed beef and allow it to brown, then remove and set aside.
- In the same pot, add onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Add minced garlic and sauté for 1 minute until fragrant.
- Return browned beef to the pot, then mix in beef broth, pearl barley, and canned tomatoes.
- Add bay leaves and thyme, bring to a simmer, and reduce heat to low-medium. Cook until beef is tender and barley is cooked.
- Season with salt and pepper to taste. Serve hot.
Notes
For enhanced flavor, use homemade beef broth. Soup improves after resting in the fridge overnight. Can customize by adding other vegetables.
