Ingredients

- 2 pounds beef, cut into cubes
- 2 pie crusts (homemade or store-bought)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 2 cups beef broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- Brown the beef cubes in vegetable oil until well-seared.
- Remove beef and sauté onions and garlic until softened.
- Add curry powder and cayenne pepper, cooking until fragrant.
- Return beef to pot, add broth, and simmer until meat is tender.
- Let filling cool completely.
- Preheat oven to 375°F (190°C).
- Line pie dish with bottom crust, add filling, cover with top crust.
- Brush with egg wash, cut vents, and bake for 35-40 minutes until golden.
Notes
- Filling can be made up to 2 days ahead and refrigerated.
- Entire unbaked pie can be frozen.
- If baking from frozen, cook at 375°F for 50-60 minutes.
- Adjust spiciness by varying the amount of cayenne pepper.
- Leftover roast beef can be used – skip browning and reduce cooking time.
