A comforting beef enchilada casserole layered with tortillas, seasoned ground beef, cheese, and black beans, perfect for family gatherings.
Ingredients

- 1 pound ground beef
- 1 can red enchilada sauce
- 8 corn tortillas
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups cheese (cheddar or Mexican blend)
- 1 onion, chopped
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef and chopped onion until browned; drain excess fat.
- Add cumin, salt, and pepper to the beef mixture.
- Spread a layer of enchilada sauce on the bottom of a baking dish.
- Layer four corn tortillas over the sauce.
- Add half of the beef mixture, half of the black beans, half of the corn, and half of the cheese.
- Repeat layers with the remaining ingredients and finish with cheese on top.
- Pour remaining enchilada sauce over the top.
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let cool slightly before garnishing with cilantro and serving.
Notes
Experiment with spices and cheese for added flavor. Letting the casserole cool helps it set for easier slicing.
