Description

A comforting and flavorful beef enchilada casserole layered with ground beef, enchilada sauce, black beans, corn, rice, and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 can enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • Fresh cilantro, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Stir in the enchilada sauce, black beans, and corn into the skillet with the ground beef.
  4. In a large casserole dish, layer half of the cooked rice, then half of the beef mixture, and sprinkle with cheese. Repeat the layers.
  5. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  6. Remove from the oven and garnish with fresh cilantro and chopped green onions before serving.

Notes

Customize the toppings with avocado slices or sour cream for an extra touch.
