- 1 lb ground beef
- 1 can enchilada sauce
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 2 cups cooked rice
- 1 cup shredded cheese
- Fresh cilantro, for garnish
- Green onions, chopped, for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Stir in the enchilada sauce, black beans, and corn into the skillet with the ground beef.
- In a large casserole dish, layer half of the cooked rice, then half of the beef mixture, and sprinkle with cheese. Repeat the layers.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh cilantro and chopped green onions before serving.
Notes
Customize the toppings with avocado slices or sour cream for an extra touch.
