  • 1 (10 oz) can red enchilada sauce
  • 1 (12 oz) package canned corn (drained)
  • 1 (16 oz) can refried beans
  • 12 soft corn tortillas (street taco/individual size)
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (14.5 oz) petite diced tomatoes (undrained)
  • 3 cups shredded Mexican blend cheese
  • 1 tablespoon chili powder
  • 1½ teaspoons cumin
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • ½ teaspoon dried oregano
  • 2½ teaspoons additional chili powder
  • ½ teaspoon dried basil
  • ⅛ teaspoon black pepper
  • ¾ teaspoon salt
  • ¼ teaspoon ground cumin
  • 1 teaspoon dried parsley
  • ¼ cup salsa
  • 6 oz tomato sauce
  • 1½ cups water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Season with 1 tablespoon chili powder, 1½ teaspoons cumin, ½ teaspoon garlic powder, and ¾ teaspoon salt.
  3. When the beef is browned, drain excess fat. Stir in the refried beans, canned corn, black beans, diced tomatoes, and minced garlic. Cook for an additional 2-3 minutes until heated through.
  4. Grease a baking dish with olive oil. Spread a thin layer of enchilada sauce on the bottom of the dish.
  5. Layer corn tortillas on top of the sauce. Spread half the beef mixture over tortillas, followed by 1 cup of shredded cheese.
  6. Repeat layering: add more tortillas, the remaining beef mixture, and another cup of cheese.
  7. Top with the last layer of tortillas, the remaining enchilada sauce, and the remaining cheese.
  8. In a bowl, combine 1½ cups water, salsa, tomato sauce, remaining chili powder, salt, ground cumin, oregano, basil, black pepper, and parsley.
  9. Pour this mixture over the assembled casserole. Cover with foil and bake for 25 minutes.
  10. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.

Notes

Serve with fresh herbs and a side of salad or guacamole for a complete meal. Can be assembled ahead of time and baked later.
