Description

Delicious beef enchiladas wrapped in corn tortillas and smothered in red enchilada sauce, topped with melted cheese and fresh ingredients.


Ingredients

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 1 cup red enchilada sauce (store-bought or homemade)
  • 1 medium onion, finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the ground beef and chopped onion until browned (6-8 minutes). Drain excess fat.
  3. Stir in 1 cup of red enchilada sauce and let simmer for 5 minutes.
  4. Fill each tortilla with the beef mixture and sprinkle cheese on top before rolling them tightly. Place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over rolled tortillas and top with extra cheese.
  6. Bake for about 25 minutes until hot and bubbly. Serve topped with sour cream and cilantro.

Notes

Warming the tortillas slightly before filling can help prevent cracking. Customize fillings with black beans or jalapeños for added flavor.
